the quest for eating right took a big step forward today: I packed a salad for lunch.
It's a pretty decent one as salads go. Iceberg and romaine lettuce, cucumbers, tomatoes, red pepper, honey dijon dressing, and a honey dijon marinated grilled chicken breast.

Buying that new grill was one of my smarter purchases. Not only can I throw some great cookouts, but I can prepare for the whole week. Last night I grilled about 7 chicken breasts. All I need to do is throw the vegetables together either the night before or morning of work, dump the chicken in, and I'm set. The only concern now is: will it be filling enough?

It tastes sooooo good.

try replacing the iceburg with spinach or just more romaine. iceburg really has no redeeming qualities, unless you really dig the taste. or try kale if you like the bitter greens, altho it's not really salad material. also, watch the contents of the honey dijon dressing and marinade, it can surprise you. this moment of health brought to you be a friendly vegan...
