the quest for eating right took a big step forward today: I packed a salad for lunch.
It's a pretty decent one as salads go. Iceberg and romaine lettuce, cucumbers, tomatoes, red pepper, honey dijon dressing, and a honey dijon marinated grilled chicken breast.
Buying that new grill was one of my smarter purchases. Not only can I throw some great cookouts, but I can prepare for the whole week. Last night I grilled about 7 chicken breasts. All I need to do is throw the vegetables together either the night before or morning of work, dump the chicken in, and I'm set. The only concern now is: will it be filling enough?
It tastes sooooo good.
